Fermented Shallots - Lemongrass & Chilli

Fresh season shallots that have been lacto fermented with lemongrass and birds eye chilli.

All the ingredients (minus the salt) were grown on the farm until they were naturally fermented to lock in the fresh flavour and nutrients.

The shallots were the first harvest of produce grown on the farm to become products. They were grown from a tray that had been partly planted out on another farm and no longer needed as they were getting on a bit. So they were brought to Shedhouse Farm and planted into a newly setup bed where they grew to be big and sweet.

The lemongrass and chillis were also grown on the farm having been started in Brisbane and moved down to Kyogle where they were replanted and thrived!

Fermenting these ingredients together brings out the best of each while combining into a South East Asian style flavour, fresh, spicy and tangy. Perfect for Summer salads, smashed potato, grilled fish and more!
